I'd say you will want to first work on getting things mechanically smooth. Find your vibration problem ... engine tune, blade balance, gear binding, etc can cause the type of problem you're describing. Start with engine tune.
On your gyro ... 16mm on the servo horn sounds about right for the 500. That is 16mm hole center to hole center? Are your rudder ATVs set at 150%? Is your horn exactly 90 degrees to the rod? Something in the range of 75% gain is the target ... below 50% indicates the servo horns are too long ... but 16mm, if anything, might be too short ... so I'm guessing you have something else going on ... but until you get things squared away mechanically, with no vibration, it will be difficult to diagnose. For now ... if 30% works ... stay with it until you get the rest of it working ... then go back to the gyro and dial it in.
